Melt butter in a 5-quart heavy-bottomed saucepan. Stir well.

Add the potatoes to the pot. Cook for about 10 minutes, stirring often, until they are very hot. Drain and rinse them on paper towels.

Add half the water and stir until the base coat is completely dry
